Guilt Free, High Fat Treat!
The Rochester Farmers Market is THE BEST! I love going there because I come away with a Wegman’s reusable bag FULL of produce all for $9! At Wegman’s it probably would have cost me $20! Get to your local market if you haven’t, you’ll love the savings!
Here is my market bought kale, massaged with olive oil, salt and market bought lemon (juice) with some bacon! High fat snack with a superfood veggie and some protein.
Here is my non-professional photo of my new favorite high fat treat and some of the ingredients. I used the following recipe from RealFoodRn.Com because it was the simplest and I could see how I can adapt it to other ingredients for different flavor variations.
Ingredients:
- 1/2 cup coconut butter
- 1/4 cup grass-fed butter (I use Kerrygold)
- 1/3 cup shredded coconut
- 2 tsp vanilla
- 2 tablespoons dark cocoa powder
I melted the coconut butter and grass-fed butter together over low heat. Once everything was liquified, I took it off the stove and added the vanilla, shredded coconut and dark cocoa powder. Stirring until all blended. I lined a small cookie sheet (10″ x 5″) with edges with wax paper. Poured the liquid onto the sheet and popped into the fridge. Waited about 1 hour until it was firm, sliced into squares, placed into mason jar and put in freezer. I compared freezer to fridge squares and concluded I like them stored in the freezer.
Doing rough math for the nutrition, 2 oz is 93 calories, 11g fat, 1g carb and 2g protein.
Adam and I love them because we both enjoy dark, 70%+ chocolate so the lack of sweetness is okay. Next time around I’m going to add Ameo Peppermint Oil for a chocolate/mint variation. I also want to try sans chocolate plus cinnamon! Yumm! Will post updates!
