Lemons, Almonds, & Protein

Tonight, instead of sitting and relaxing, I decided to try out some new recipes!

The first was a recipe from my friend Stephanie and her blog OnTheRoadToRd! They’re lemon meringue cookies….or whatever shape you decide to pipe them in! I’m so excited because the one’s that Steph made were delicious, I can’t wait to try these!

The second thing I made was Almond Butter. I have a Vita-mix so making nut butter is a snap.

It was quite simple. Roast 2 c of almonds for 20 minutes. Toss them in the Vita-mix with a tsp of salt and grind. Then slowly add oil of your choice until it reaches desired consistency! Boom – home made nut butter.

Last but not least, I made Protein Freezer Balls. Now, these don’t have to be made with protein but I add it for another way to get protein then the regular shakes, eggs, beans, etc. Plus, these are mighty tasty! Perfect for morning or preworkout snacks!

I don’t measure these ingredients anymore because it’s really to taste – but here are my guesstimates!

2 c oats
2 scoops protein powder
1 c melted nut butter
1/4 raisins
handful of chocolate chips (I used gluten/dairy free)
2 TBSP honey
1 tsp vanilla
1/4 cup milk of choice (add if you don’t have any other liquids like maple syrup or brown rice syrup. They add moisture in addition to stickiness which makes forming the balls easier.)

Feel free to add whatever else you like! Craisins, more or less protein…anything!

Form into any size ball or bar shape! Not going to lie – this is KINDA a pain, but it’s worth it! Sometimes wetting your fingers with water will help.

Put them in a container and stick in the freezer! Perfect in about 4-5 hours.
