Coconut Milk is my Jam!!!

This Saturday’s Mom & Babe event was a HIT!! The babes were fantastically cute and great participants! I heard the mom’s learned a lot and we even got a little sweaty. Here’s a moment where I’m coaching a proper squat while holding baby nice and close!

IMG_7146Ahhhhh canned coconut milk – I LOVE YOU! I’ve been combining 1/3 C chia seeds with 1 can Native Forest Coconut milk (because their cans do NOT have BPA like Thai Kitchen does), cinnamon/nutmeg to taste in a glass jar and letting it set in the fridge overnight! GLORIOUS!

Need reasons to consume chia seeds? Here’s 20! I personally put chia in water with lemon and orange Ameo essential oils to drink throughout the day. You can throw them on salads, in oatmeal, whatever! They have no taste and actually enhance the flavors of whatever they’re mixed with.

Tonight I’m attempting this combo: chia, coconut milk, Aloha vanilla protein powder, cinnamon and shredded coconut. I’ll post pictures on Instagram (come follow along!) tomorrow.

Lastly, at Father’s Day dinner last night, I consumed my first IPA and carbohydrate in almost a month! At Signature’s in Penfield (so so so good by the way) I sipped on the beer throughout the meal consumed maybe 3/4-1 C of small potatoes with artichokes. Yesterday, I also had my first indoor game so that helped my body absorb and instantly refuel my muscle glycogen stores with the carbohydrates from dinner. I had high ketones this morning so I’m good!
